After several years spent making wines in various regions of France and the world, Emmanuel Rey discovered the extent of the micro-breweries phenomenon in the United States in 2006 during winemaking. What followed was an internship at the Brasserie Sancerroise in July 2007 to discover brewing on a “real scale”, training at the IFBM in Nancy and numerous tests in the family kitchen to perfect the recipes. A premises was quickly found in the territory of the Vallée de Chevreuse Natural Park. The Brasserie moved to Bonnelles where it remained for 10 years until its move in 2018 to Perray en Yvelines.
